Brazilian Style Flan





This recipe was given to me by my friend Alessandra and is a Brazilian style flan.

Ingredients
for the flan
1 can (12 fl. oz.) Evaporated Milk
1 can (14 oz.) Sweetened Condensed Milk
I used the low fat versions of both
3 large eggs
1 tablespoon vanilla extract
1 garnish of fresh fruit, (optional)
For the caramel
250gr. sugar
2 tablespoons water

Directions:
PREHEAT oven to 325° F.

I make my caramel in the microwave, it is so much easier this way. Mix the sugar with the spoons of water in a safe microwave bowl. Put it in high for 5' and continue doing it until you reach that brownish color. Quickly pour onto bottom of deep-dish 9-inch pie plate; swirl around bottom and sides to coat. Be very careful with this step. Let it dry.

Combine evaporated milk and sweetened condensed milk, eggs and vanilla extract in medium bowl. Pour into prepared pie plate. Place pie plate in large roasting pan; fill roasting pan with warm water to about 1-inch depth.

Bake for 45 to 50 minutes or until knife inserted near center comes out clean. Remove flan from water. Cool on wire rack. Refrigerate for 4 hours or overnight.

Run small spatula around edge of pie plate. Invert serving plate over pie plate. Turn over; shake gently to release. Caramelized sugar forms sauce. Garnish with fruit as desired.


























I like to serve my flan with homemade whipped cream. Mmmm.... ;)

1 pint heavy whipping cream
4 tablespoons sugar
vanilla extract

You have to put the metal bowl of the mixer in the freezer for a while before start making the whipping cream.
After this step, put all ingredients into the bowl and begin to beat in the faster cycle of the mixer.
The cream is ready when it is seen that the mixer leaves like tracks.

























Serve together with the flan or with fruit.
